About the Role:
An exclusive 5-star lodge situated within a renowned private game reserve in the Eastern Cape is seeking an experienced and passionate Head Chef to lead the culinary team and deliver an exceptional dining experience for guests. This position requires a creative, hands-on professional with strong leadership skills, excellent attention to detail, and a passion for refined lodge cuisine that reflects a deep connection to local ingredients and sustainability.
Key Responsibilities:
• Oversee and manage all kitchen operations, ensuring smooth daily service and consistent high-quality food preparation.
• Design and execute seasonal, innovative menus that align with the lodge’s luxury brand and guest expectations.
• Maintain the highest culinary and presentation standards across all meals and special events.
• Manage, train, and mentor kitchen staff to foster teamwork, efficiency, and professional growth.
• Control food costs, manage stock levels, and oversee ordering and supplier relationships.
• Ensure all hygiene, health, and safety regulations are maintained and strictly adhered to.
• Collaborate with lodge management to enhance the overall guest experience through food and service excellence.
• Support special functions, private dinners, and bush dining experiences with creativity and precision.
Requirements:
• Minimum 3–5 years’ experience as a Head Chef or Senior Sous Chef in a 5-star lodge, hotel, or fine dining environment.
• Exceptional culinary skills with a strong understanding of modern plating and flavour profiles.
• Proven leadership and team management abilities.
• Strong organisational skills and attention to detail.
• Experience managing budgets, cost controls, and supplier relationships.
• Passion for sustainability and use of fresh, locally sourced ingredients.
• Ability to thrive in a remote, bush environment and maintain calm under pressure.
• Relevant culinary qualification or diploma (advantageous).
